Ingredients
  

Vegetables

  • 1 large shallot quartered
  • 3 cloves garlic smashed
  • 2 pints cherry or grape tomatoes

Oil and Seasoning

  • ½ cup extra-virgin olive oil divided
  • Kosher salt
  • 1 pinch crushed red pepper flakes

Cheese

  • 1 block feta 8 oz.

Pasta

  • 12 oz. short tubular pasta such as macaroni or cavatappi

Garnish

  • 1 zest lemon optional
  • fresh basil leaves for serving

Cooking Steps

  • Preheat the oven to 400°F. In a large skillet, combine shallot, garlic, tomatoes, and ½ cup olive oil; season with salt and red pepper flakes and toss to combine.
  • Place feta in the center of the mixture and drizzle with reserved olive oil.
  • Bake until the tomatoes are bursting and the feta is golden on top, 40 to 45 minutes.
  • Meanwhile, cook pasta in a large pot of boiling salted water until al dente; reserve ½ cup pasta water before draining.
  • Add cooked pasta and reserved pasta water to sauce and stir until combined. Top with lemon zest and basil.

Notes

For a creamier dish, stir in some of the pasta cooking water until desired consistency is reached.
