- 3 cloves garlic smashed
- 2 pt cherry or grape tomatoes
Pasta and Feta
- 12 oz short tubular pasta such as macaroni or cavatappi
- 1 block feta 8-oz.
Oils and Seasonings
- ½ cup extra-virgin olive oil divided
- 1 tablespoon Kosher salt
- 1 pinch crushed red pepper flakes
Garnishes
- 1 each lemon zest of 1 lemon (optional)
- fresh basil leaves for serving
Baked Feta Preparation
Preheat the oven to 400°F and arrange a rack in the center.
In a large ovenproof skillet or baking dish, combine shallot, garlic, tomatoes, and all but 1 tablespoon of oil; season with salt and red pepper flakes and toss to combine.
Place feta into the center of the tomato mixture; drizzle with reserved 1 tablespoon of oil and scatter thyme sprigs over tomatoes.
Bake sauce until tomatoes are bursting and feta is golden on top, about 40 to 45 minutes.
Pasta Preparation
In a large pot of boiling salted water, cook pasta according to package directions until al dente.
Reserve ½ cup of pasta water before draining.
To the sauce, add the cooked pasta, reserved pasta water, and lemon zest (if using) and stir until combined.
Top with fresh basil leaves before serving.
