Meat and Vegetables

  • 1 lb ground beef
  • 1 chopped onion
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon dried cilantro
  • ¼ teaspoon cayenne
  • 1 tablespoon minced garlic

Pasta and Sauces

  • 19 oz frozen tortellini
  • 10 oz Mild enchilada sauce
  • 10 oz Rotel (diced tomatoes and green chiles)
  • 1 cup shredded Monterey Jack Cheese
  • Sour cream for serving

Cooking Steps

  • Brown ground beef in a large skillet over medium high heat.
  • Add chopped onion. Once beef is fully cooked, drain any extra grease.
  • Season with salt, pepper, chili powder, cumin, dried cilantro, and cayenne. Add minced garlic and stir.
  • Add enchilada sauce, Rotel, and frozen tortellini to the skillet.
  • Bring to a boil and then turn heat down to medium low once bubbling.
  • Cover and cook for about 5 minutes, stirring halfway through.

Notes

Serve with sour cream on top.
