- 16 oz rotini pasta
- 12 oz smoked sausage sliced
- 3 tablespoon salted butter
- 2 tablespoon flour
- 4-7 cloves garlic minced
- 3 cups half and half
- 1 cup chicken stock
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon oregano
- 1 cup shredded cheese
- 15 oz diced tomatoes drained
- ¼ cup parmesan shredded
Bring a large pot of water to boil. When water boils, add pasta and cook according to package directions. Drain. Set aside.
In a large skillet over medium heat, brown the sliced sausage. Remove from pan and set aside.
In the same skillet, melt butter. Whisk in flour and garlic until completely incorporated.
Slowly add half and half, whisking as you pour to prevent clumping. Stir in the chicken stock.
Season sauce with salt, pepper, and oregano.
Add shredded cheese and stir until melted.
Add sausage, pasta, and diced tomatoes to the sauce. Toss to coat everything with the sauce.
Top with shredded parmesan cheese.
