Plantains

  • 2 pieces yellowish / greenish plantains can use green or speckled brown/yellow also
  • 3-4 Tablespoons avocado or coconut oil
  • salt to taste

Preparation and Cooking

  • Chop off the ends and score the skin of the plantains using a knife.
  • Peel back the plantain skin carefully.
  • Chop the plantains into ¼-inch thick pieces, preferably diagonally.
  • Heat oil in a large skillet until shimmering but not smoking.
  • Add plantains to the oil in an even layer. Fry until browned on one side, then flip and brown the other side, approximately 4-6 minutes.
  • Remove to a paper-towel lined plate and dust with salt.
  • Serve and enjoy!
