Ingredients
  

Fish

  • 4 fillets cod
  • 1 tablespoon olive oil for drizzling
  • Salt and pepper to taste

Sauce

  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic minced
  • 1 tablespoon grated ginger optional
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Garnish

  • Fresh parsley or cilantro for garnish

Cooking Steps

  • Preheat oven to 375°F (190°C).
  • Lightly grease a baking dish and place cod fillets in it. Drizzle with olive oil and season with salt and pepper.
  • In a saucepan over medium heat, combine coconut milk, lemon juice, zest, garlic, and ginger. Bring to a simmer.
  • Stir in the cornstarch slurry and cook until sauce thickens slightly.
  • Pour sauce over the cod and bake for 20 minutes, or until fish flakes easily with a fork.
  • Garnish with parsley or cilantro and serve hot.

Notes

Use fresh lemon juice for the best flavor. Pairs well with rice, quinoa, or steamed veggies. For a spicier version, add a pinch of red chili flakes to the sauce.
